Butter Bean Dip with Sticky Onion Topping

Indulge in the creamy delight of one of my favourite dishes, my Butter Bean Dip, taken to a new level with a tantalizing sticky onion topping. This unique combination sets the dish apart, with the onions offering a luscious, sweet contrast to the smooth, rich base of the dip.

A consistent crowd-pleaser at dinner parties, this dip has earned its place as a fridge essential, because of its versatility.  Whether you’re spreading it as a pâté or adding a dollop to enhance your favourite dishes, the ease and consistency of preparation with a Vitamix blender, along with the super smooth texture of this dip, make this recipe a must-try for any occasion.

Ingredients

For the Dip:

  • 400g butter beans, drained (save the liquid aquafaba for another recipe)
  • 30ml water, or more or less to loosen
  • 4 tbsp tahini
  • juice of ½ lemon
  • salt and black pepper, to taste

For the Topping:

  • 80ml olive oil
  • 1 onion, finely sliced in half moons
  • 1/2 teaspoon chilli flakes
  • 3 dates, pitted & torn into shreds
  • 1 teaspoon sweet or smoked paprika
  • 2 tbsp walnuts, roughly chopped

To Serve:

  • chopped parsley or coriander

Directions

  1. Add butter beans, tahini, water, lemon, salt & pepper to your Vitamix blender and start blending on setting 1 for around 30 seconds, then work up to setting 3, and then switch to high and blend until nice and smooth.
  2. Meanwhile, add the olive oil to a frying pan and gently heat. Then add the onion and fry for 5-10 minutes until they become cooked.
  3. Add the chilli, dates, paprika, and walnuts to the pan and cook for a further few minutes for everything to infuse.
  4. To serve, add the dip to the base of a lovely platter, then top with the onions and drizzle any remaining oil over the dish.
  5. Serve with crackers or bread, and enjoy!
