Do you ever feel like whipping up a comforting bowl of homemade soup but can’t find the time to do it?  Well I have recently discovered a very reliable kitchen helper which simplifies the cooking process, allowing you to enjoy a delicious, vegetable-packed soup without spending hours in the kitchen.

With the help of the Instant Pot Pro Plus, this could well be the quickest soup you have made. This five-veg minestrone is a nutritious and hearty meal, perfect for those chilly days or when you need something warming, satisfying and filling.

The Instant Pot Pro Plus ensures that all the flavours come together beautifully, making each spoonful of this minestrone a spoon of deliciousness.  Serve this healthy soup up with some crusty bread and this will keep you satisfied until your next meal.

Ingredients

  • 2 tbsp olive oil
  • 1 carrot, small diced
  • 1 potato, small diced
  • ½ swede, small diced
  • 1 large shallot, chopped
  • 1 courgette, large diced
  • 1 pepper, large diced
  • A few sprigs of fresh thyme, destemmed
  • 1 400g tin chopped tomatoes + 2 tin water
  • 100g pearl couscous
  • Salt & pepper to taste

To Serve:

  • Handful of chives, chopped
  • Sprinkle of grated cheese, plant-based or dairy

For the topping:

  • Handful of plant-based or dairy cheese, grated

Directions

  1. Using the Instant Pot Pro Plus, start by pressing ‘Saute’ for it to pre-heat.
  2. Once heated, add the olive oil and the onions, briefly stir, then add all the other ingredients. Stir everything together and then press ‘Pressure Cook’ and ‘Start’.
  3. Once finished, press ‘Vent’ and allow the steam to release.
  4. Open the lid and serve into soup dishes, topped with chopped chives and grated cheese.
