I have recently discovered the simplicity and deliciousness of making chilli in the Instant Pot Superior Slow Cooker.

There is really not very much to do at all once you have prepared your veggies – it’s a case of handing it over to the exceptional capabilities of the Instant Pot, which takes care of everything else, ensuring that each ingredient melds together perfectly over hours of gentle cooking.

Ingredients

  • Olive oil, for frying
  • 450g mixed mushrooms, torn into small pieces
  • 1 leek, halved and thinly sliced
  • 500g black beans (drained weight)
  • Pinch of chili flakes
  • 1 tsp smoked paprika
  • 1 tsp taco spice
  • 1 400g tin tomatoes + 1 tin of water
  • 30g dark chocolate
  • Salt & pepper to taste

To Serve

  • 50g rice per person, cooked as per packet instructions
  • 1 tbsp plant or dairy yoghurt per person
  • Sprinkle of chives, chopped
  • 1 tbsp quick pickled onions

Directions

  1. Switch on the Instant Slow Cooker and press “Sear/Saute.”
  2. Add a large glug of olive oil to the pot then add the leeks, smoked paprika, salt, and pepper and taco spice, and saute for a minute. Then add the mushrooms, chili flakes, black beans, chopped tomatoes, water, and chocolate. Stir and add the lid.
  3. Change the setting to “Slow Cook” for 2 hours.
  4. Relax for 2 hours 🙂
  5. Serve up in a bowl over some steamed rice, and top with a dollop of yogurt, sprinkle of chives, and some quick-pickled onion.
