I’ve recently discovered the wonders of Lovegrass Ethiopia’s Pancake & Waffle Mix, and it’s been a game-changer in my kitchen!

The star ingredient, teff flour, is something I’ve grown to love for its nutty flavour and incredible nutritional benefits. Not only is teff naturally gluten-free, but it’s also packed with protein, fibre, and iron, making these pancakes both delicious and nourishing.

Every time I use this mix, I feel transported by the rich, earthy taste that teff flour brings and I love the fact that by using this brand, I’m incorporating a piece of Ethiopian heritage into my meals, making breakfast time both a tasty and culturally enriching experience.

Lovegrass Ethiopia has done an amazing job harnessing the goodness of this ancient grain, allowing everyone to create meals that are as wholesome as they are tasty.  

Ingredients

  • 160g Lovegrass Ethiopia Pancake & Waffle Mix
  • 270ml plant milk
  • 50g plant or dairy butter, or oil
  • Coconut oil, for frying

For the Topping:

  • 100ml whipping plant cream, whipped
  • Maple syrup
  • 2 tbsp Lovegrass Teff Cereal Rings

Directions

  1. In a mixing bowl, add the Lovegrass Ethiopia Pancake & Waffle Mix, milk, and butter (or oil) and whisk to combine into a runny batter. Leave to sit for 3 minutes.
  2. Heat a teaspoon of coconut oil in a frying pan and pour in some pancake mix. Once bubbles have formed, turn them over to brown on the other side.
  3. Stack up on a plate when ready and drizzle with maple syrup, whipped cream, and some Lovegrass Cereal Rings. And enjoy!
