Slow Cooked Buckwheat Porridge

Starting my day with a bowl of slow-cooked porridge made with Bek & Veggie Almond Milk has become something of a cherished ritual for me.

There’s something truly special about the creamy, nutty flavour that this almond milk adds to the porridge, enhancing its natural warmth and comfort.

By slow cooking this porridge, it allows the oats to fully absorb the almond milk, creating a texture that’s super rich and tasty. I’m particularly fond of Bek & Veggie’s commitment to natural, wholesome ingredients, in fact there are only 3 ingredients in this milk, and the highest content of almonds in any milk I have seen!

There’s something incredibly soothing about stirring a pot of porridge, watching it transform into a creamy delight, and then enjoying the warmth and nourishment it provides. I feel like porridge is good for the soul, especially on chilly mornings or when I need a little extra comfort.

Plus, the gentle sweetness of Bek & Veggie Almond Milk means I can enjoy my porridge with minimal added sugars, making it a healthy choice that doesn’t compromise on taste.

It is also incredibly delicious and creamy to enjoy in tea or coffee!

Ingredients

  • 90g whole buckwheat
  • 30g oats
  • 250ml water
  • Pinch of salt
  • 100ml Bek & Veggie Almond Milk
  • 1 small apple
  • 1 tsp coconut oil
  • Sprinkle of cinnamon
  • Sprinkle of coconut sugar

Directions

  1. In a small pan over medium heat, add the buckwheat and oats, water, and salt. Stir to combine and bring to a boil, then turn down to simmer for a few minutes until the water starts to become absorbed.
  2. Now add 100ml Bek & Veggie Almond Milk and continue to cook over low heat for another few minutes, stirring occasionally, until it is lovely and creamy!
  3. Meanwhile, chop a small apple into small cubes. Heat the coconut oil in a small frying pan and add the apple and cinnamon. Fry over medium heat for a few minutes to soften.
  4. Serve the porridge into a bowl, drizzle some more Bek & Veggie Almond Milk, top with the fried cinnamon apple, and sprinkle with some coconut sugar. And enjoy!
