Delicious Multi Veg Noodle Salad

I love salads, they are so versatile, and here is my version of a Multi Veg Noodle Salad, full of vibrant colours and fresh flavours, accompanied by a zesty tamari and tahini ginger dressing.

The star of this recipe is not just the variety of fresh vegetables, but the precision and ease with which they are prepared, thanks to the exceptional quality of Robert Welch knives. Ingredients

  • 200g rice noodles
  • handful of green beans, ends chopped off
  • 1/2 red pepper, thinly sliced
  • 1/2 yellow pepper, thinly sliced
  • 1/2 green pepper, thinly sliced
  • 4 spring onions, finely chopped
  • 2 tbsp quick-pickled onion

For the Dressing:

  • 40ml tamari
  • 2-3 tbsp maple syrup
  • 50g tahini
  • juice of ½ lemon
  • thumb of ginger, grated
  • 2 tbsp sesame seed oil

For the Topping:

  • handful of black sesame seeds

Directions

  1. Cook the rice noodles as per the packet instructions and when there are 5 minutes left of cooking, add the green beans into the same pot to quickly cook. Drain the noodles and green beans together, and set aside.
  2. Meanwhile, whisk all the dressing ingredients together in a bowl until combined.
  3. On a large salad platter, add the noodles & green beans to the base and then arrange all the other ingredients around and on top.
  4. Pour the dressing over the whole salad and top with black sesame seeds.
  5. You can either serve it as is, with all the individual ingredients placed separately as the colours look so pretty, or mix to combine before serving!
