”Your 12 a Day in a Tray” Vegan Bake Recipe

A vegetable medley loaded with natures goodness. You can use your leftover veg at the back of your fridge to make this vegan recipe. Harrisa paste gives the veg a spicy kick. Tomatoes a sweet rich taste. This vegan dinner is a filling hearty meal providing you with more than your 5 a day. Enjoy!

Ingredients

    For the Tray Bake
  • 2 tbsp olive oil
  • 1 tbsp harissa paste
  • any leftover vegetables in your fridge – we used:
  • 50g yellow pepper, chopped
  • 65 red pepper, chopped
  • 200g courgette, chopped
  • 165g leeks, chopped
  • 55g mushrooms, chopped
  • 165g broccoli, chopped
  • 1 spring onion, chopped
  • 75g brown rice (uncooked)
  • 1 tin butter beans, drained
  • 1 tin chopped tomatoes
  • 400ml water or vegetable stock
  • 10g chives, chopped
  • 20g thyme, chopped

Directions

  1. Preheat the oven to 200ºC.
  2. Pour oil into an oven tray, add all the chopped veg (except the herbs, beans, tomatoes, rice & water/stock) and the harissa paste and mix together well. Place in the oven to roast for 30 mins.
  3. After 30 mins, bring out of the oven and add rice, herbs, beans, tomatoes and water/stock.
  4. Mix well, turn down the oven to 180ºC and cook for a further 30 mins until the rice is cooked.
