Warm Pea & Fennel Salad

What’s so great about this Warm Pea & Fennel Salad Recipe? Firstly, lets start with the health benefits of Fennel. It should be noted that this Warm Pea & Fennel Salad is sweet tasting with a spicy warm kick and tart flavour. Warm Pea & Fennel Salad Recipe

    For the Warm Pea & Fennel Salad:
  • 100ml olive oil
  • 280g fresh peas (podded weight)
  • 1 leek
  • 1 fennel
  • 1 baby gem lettuce
  • pinch of salt & pepper
  • For the Dressing:
  • 1 tbsp fresh dill
  • 60ml olive or rapeseed oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • ½ red chilli, finely sliced
  • 1 tsp szechuan pepper
  • pinch of salt & pepper


  1. Preheat the oven to 180ºC.
  2. Slice fennel into 5-6 pieces through the root, 1-2cm thick.
  3. Slice the leek down the middle, wash well, then cut into 3-4 inch pieces.
  4. Add the fennel, leek and peas into a baking tray, add salt and pepper, and pour the olive oil over to coat the vegetables. Put in the oven for 40 minutes.
  5. Meanwhile, heat the oil in a small pan and when hot, remove from the heat. Add all remaining dressing ingredients into the oil, they will sizzle and cook in the residual heat. Transfer to a heatproof jar and set aside.
  6. Once the vegetables are nicely roasted, transfer to a serving platter, top with some baby gem lettuce leaves, and drizzle with the dressing before serving.

    This salad was a huge hit, I made it as soon as I saw it on Instagram. Yummy sweetness of peas was awesome! Will be making it on repeat for sure.
