Roasted Sweet Radishes & Pine Nuts Vegan Recipe

Quick vegan recipe. This healthy snack is great for eye health as pine nuts contain a lot of lutein and zeaxanthin. Sweet and even sweeter when its so healthy for you.

Roasted Sweet Radishes & Pine Nuts Vegan Recipe

    For the Roasted Sweet Radishes & Pine Nuts:
  • 200g radishes
  • 1 tbsp maple syrup
  • 1 tsp dijon mustard
  • 2 tbsp pine nuts
  • 1 tbsp olive oil


  1. Preheat the oven to 200ºC.
  2. Put the radishes and all other ingredients into a bowl and mix well to coat everything.
  3. Pour into an oven tray lined with greaseproof paper and roast for 20-30 minutes.
