    For the Pan Con Tomate
  • 1- 2 fresh tomatoes
  • 30ml olive oil
  • 1 tsp apple cider vinegar
  • 1/2 clove of garlic
  • pinch of salt


  1. Place all the ingredients into a blender and blitz until everything is well combined.
  2. This keeps for a few days in the fridge, and is delicious topped on toasted bread, especially sourdough!
