Almond Vegan Feta Balls with Caramelised Onions

For all those who miss feta, well you don’t have to now cause this is just as tasty. Firstly, what’s great about it, is the fact its a cruelty free version of feta. With the addition of probiotics it’s the perfect snack for a healthy savoury vegan treat. It’s sweet from the caramelised onions then has a smokey kick and rich nutty salty taste just like cheese but guilt free!

Almond Vegan Feta Balls with Caramelised Onions

    For the Almond Feta Balls:
  • 280g blanched or sliced almonds
  • 160ml water
  • 1 probiotic capsule
  • ½ tsp salt
  • For the Caramelised Onions:
  • 1 shallot
  • 2 cloves garlic
  • ½ chilli
  • 1 tsp sweet smoked paprika
  • 60ml olive oil


  1. To make the almond feta, start by soaking the almonds for 2 hours in a bowl covered with water.
  2. Drain the nuts and tip them into a blender along with the fresh water and blitz until you get a smooth texture.
  3. Once blended, transfer to a clean glass or plastic container and mix in the contents of the probiotic capsule. Do not use a metal bowl or utensils as the mixture won’t ferment. Leave the container outside the fridge for 24 hours with a tea towel or muslin cloth (cheesecloth) on top so that the mixture can breathe.
  4. After 24 hours your mixture will be slightly fizzy and bubbly. Now add ½ tablespoon salt to the cheese mix and put the cheese into a nut milk bag – you can buy one of these in a health food store or online.
  5. Place the bag with the cheese in a sieve on top of a bowl and add a heavy weight on top – perhaps a full jam jar, or anything that will apply a bit of weight to get rid of the excess liquid. Put the cheese in the fridge for 24 hours to ‘age’.
  6. After 24 hours, the excess liquid will have dripped out, remove the cheese from the nut milk bag, and you can now form almond feta balls by using a small ice cream scoop. Place the balls on a nice serving dish.
  7. Meanwhile, heat the olive oil and paprika over a medium heat and fry the shallots, onion and chillies for 5-10 minutes until the onions are caramelised. Pour the caramelised onions over the feta balls and serve.
