After spending four weeks in Thailand I was in awe and inspired by all the different ingredients surrounding me. The fresh herbs, the fruits the veggies, the abundance and respect for all these amazing ingredients. This salad is a tribute to all of the flavours married into one happy bowl.

1/2 courgette
1/2 cucumber
1 carrot
1/2 mango
3 radishes
1/4 red onion
Sprigs of mint
1/2 fresh chili
1 lime
Toasted peanuts
2 tbs. peanut butter
1 tsp. agave
1tbs. of apple cider vinegar
1tsp. tamari soy
1/2 chopped chili
Juice 1/2 lime


With a cheese grater or mandoline. Shave your courgette, cucumber and carrots into beautiful ribbons. Slice your radishes, red onion, mango and fresh chilli, then arrange all on a pretty plate.
In a bowl mix all your dressing ingredients and drizzle on top of your salad.

Decorate with mint leaves, toasted peanuts and lime half on your plate.
This is a super fresh salad, made so quickly but so tasty and goes well with any meal or just by itself!
