Cheese one of those things that you think you will be giving up forever. I am here to tell you that this version will convert anyone that has doubts about being deprived of goodness!

It is easy, quick and so tasty. LETS GO!

1 cup of (120 grams) cashews (pre soaked for 4-6 hours)
3/4 cup (180 grams) of water or more to get the mixture going
1 tsp. of nutritional yeast
1 pinch of salt (Himalayan)
1 pinch of pepper
2 tbs. of lemon juice
Few sprigs of fresh thyme
1/4 red onion- very finely chopped


Blend cashews, water, salt, pepper, lemon, and nutritional yeast until all well combined and you get a cream cheese like consistency.
Finely chop red onion, thyme and fold in. Let mixture rest either in fridge or out and decorate with apple and thyme sprigs. 
I like spreading it on a board and serving with bread!
