1 cup of chickpea flour
1 Cup of Water
1 pinch of salt
1 tsp. of Bicarbonate of soda

This is my Plant Based version of Jamie´s yummy omelette recipe! I use chickpea flour instead of eggs and it actually is pretty darn good! It even got kid and husband approval (yay)!
Start off by mixing chickpea flour, water, salt and bicarbonate of soda in a bowl. Set it aside for about 20 minutes.
In the meantime, chop half an onion into little squares and gently fry off with some olive oil. Add the chickpea mixture just as you would scrambled eggs. After a bit you will see little air bubbles develop on the top, that’s when its time to flip it!
Serve on a plate with mashed avocado on the top with a squeeze of lemon juice, some salt and some cherry tomatoes. Drizzle some olive oil on top if you like and it’s ready!
