3 Big Juicy Tomatoes
1 Cucumber (peeled)
1/2 red onion
Variety of peppers (red, green and yellow)
Heart gem lettuce 2-3 small ones
100 grams of olive oil
3 tbs of apple cider vinegar
good pinch of himalayan salt
1 tsp of dijon mustard
1 tsp of maple syrup
pinch of black pepper
Chop up all your ingredients into nice chunky bits. This salad is supposed to be chunky with a good bite.
In a separate bowl mix your dressing ingredients.
Pour your dressing into the chopped salad and let all the ingredients mary togther.
It is particularly nice when the stale bread has soaked up all the juices from the tomatoes and the dressing.
I also like to add a bunch of fresh hers like basil and parsly on the top or mixed in.
