MY ABSOLUTE FAVOURITE BREAKFAST

Avocado on toast with BEEFY, plump, juicy tomatoes. Drizzled with a good olive oil, a pinch of Himalayan salt and a twist or two of black pepper.

Ingredients

Olive oil

Salt (always Himalayan or proper sea salt)

Pepper

Chilli flakes

Lemon juice

Red onion

Rub the bread with garlic (Spanish style)

Top off with seeds:

Hemp

Poppy

Sesame

Chia

Pumpkin

Herb oil

Method

This dish deserves its own page. I have a love affair with this combo and have had it for quite some time now. It’s the perfect balance between creamy and salty, oily (good oil) and filling. There are various things you can spice your mashed avocado with, although I have to confess, I do prefer the salt & pepper combo to anything else.
