I love love LOVE guacamole! Especially this one! It’s a great accompaniment to a salad, a wrap, a tartine or used as a dip for veggies and crackers. This is how I make my version of the OH so simple dish BUT yet we find hundreds of varieties!

2 avocados
1/4 peach or mango
1/4 of finely sliced red onion
1/2 grated garlic
1/2 chilli
2 tbs. of lemon juice
Pinch of salt (Himalayan)
Pinch of pepper


I like my guacamole authentic and not silky smooth, therefore I scoop out my avocados into a bowl and smash them with a fork.
Chop chilli, red onion, peach or mango finely and fold in along with grated garlic and rest of ingredients. 
Give it a good mix and serve or refrigerate until later. Top off with nuts, seeds, and pomegranates, whatever suits!
