HERB ROLLED MACADAMIA NUT “GOATS CHEESE”

I LOVE THIS cheese ! it is so easy to make, looks really refined and tastes so fresh.
One of the hardest things to give up when going clean is dairy and trust me this is the closest you are going to get taste wise.
Once you have the know how this is super easy and you will be wondering why you never did this before! So lets give it a go!

Ingredients

Ricotta
 
1 cup of macadamia (pre-soaked for 2-4 hours) (200 grams approx.) 
 
1/2 cup of water (120 grams), or just enough to get the mix going and creamy
 
Pinch of salt
 
Pinch of pepper
 
2 tbs. of Lemon juice
 
1 tbs. of nutritional yeast
 
(Blend all ingredients until creamy texture)
 
Herb Crust
 
Bunch of fresh basil
 
1/2 cup of toasted hazelnuts
 
1 pinch of salt
 
Lemon zes

Method

So start by making your "goats cheese"
 
That part is easy - soak your macadamia nuts for at least 2-4 hours. This enables you to get a smoother mixture that is cheese like.
 
Blend all the ingredients in a high-speed blender until smooth.
 
Get some cling film and place on a tabletop. Evenly spread the cheese mixture on top of the cling film and shape into a sausage! Refrigerate for an hour to set.
 
In the meantime prep your herb crust by placing basil, hazelnuts, salt and lemon zest in a blender and mixing until you get a lovely crumbly texture.
 
Now for the assembly part:
 
On a board spread your herb crust evenly, open up your set "cheese" sausage and roll on the crust gently.
 
Serve with crackers or slice and top off salads (my favourite version).
