This recipe was handed to me by my Egyptian clients- two lovely ladies that love cooking as much I do. Every time I make this dish I think of them and that’s a lot because it is so yummy!

500 grams of green been (any type, flat or French up to you)
3-4 garlic cloves 
1 onion
2 big juicy tomatoes
Pinch of salt
Pinch of chilli flakes
Pinch of pepper
1 tsp. of sumac
Olive oil


Clean up your green beans by cutting the ends and washing. If you have the big flat been chop into four pieces and if you are using the French beans cut into two pieces. In a hot pan pour a good glug of olive oil. Chop your garlic and onion and add into pan and gently start frying off. Add sumac and stir until onion and garlic are nice and soft. Then add beans, salt and pepper, chilli, stir and put a top on the pan. In a blender add your two tomatoes and blitz until the tomatoes become a nice fresh tomato puree. Add the tomatoes to the beans, give it a good stir, put the heat down to medium and cover for 10-15 minutes. This dish can be eaten straight away or pre-made and enjoyed later. I like to top mine of with micro greens or rocket and some chopped nuts.
