FENNEL, APPLE & ORANGE CARPACCIO

Carpaccio - One of those traditional meaty dishes that I once upon a time really enjoyed. This is by no means a replacement, merely a reminder that if we allow ourselves to think outside of the box. Apples, fennel, oranges and pomegranate create an innovative marriage of a rusty old labelled dish!

Ingredients

2 shaved apples
 
1/2 bulb of fennel
 
1 orange
 
1/2 pomegranate
 
Basic Dressing (big batch)
 
1 cup of Olive oil (240 grams)
 
2 tbs. of lemon 
 
2 tbs. of apple cider vinegar
 
1 tsp. of Dijon mustard
 
1 tsp. of agave
 
Pinch of salt (Himalayan)
 
Pinch of pepper

 

Method

Thinly slice or mandolin the veggies.
 
Cut out segments of the orange and arrange on a plate.
 
Make dressing or if you have a remade one set aside and dress just before serving.
