CORN TORTILLAS WITH POSH BEANS

Here is a another twist on Jamie Oliver favourite for food revolution. I have chosen to go super simple on this and focused on good quality ingredients.

Ingredients

2 corn tortillas

1 cup of pre cooked butter beans

250 ml of tinned tomatoes

1 shallot chopped

oilve oil for frying

salt & pepper to taste

1 handfull of soinach

1/2 an avocado

hemp heart sprinkles

Method

Start off by frying the shallots in a medium sized pan for 5 minutes until nice and soft. Add the butter beans to the pan along with the chopped tomatoes and salt and pepper to taste and cook for 10 minutes.

The Beans should be nice and slightly sticky now.

Pop your tortillas in the toaster. Place on a lovely plate and add a handfull of spinach, dollops of baked beans, a lovley sliced avocado on top and sprinkles of hemp hearts to finish.

This is one of the easiest most satifying breakfast meals ever!
