Fancy huh? Yes we can call this hummus too but I thought that might be a bit boring! Besides I have added rocket and pistachios so that validates the fanciness. I love this dish. Put it on Bread, eat it with salad, top off your rice bowl, and use it as a dip. The possibilities are endless. Lets go!

1 cup (120g) pre soaked/cooked
Chickpeas (see basics beans & pulses)

1 cup (120g) pre-soaked sesame seeds (soaked for 2 hours min)

1 handful rocket (stems and all)

2 tbs. of lemon juice 

1 garlic clove

Salt & pepper

Pistachios for garnish & extra virgin olive oil


In a blender put chickpeas and soaked sesame seeds, and then add the bunch of rocket, the juice of one lemon, the garlic and a pinch of salt & pepper. Blend until you get a smooth, nice consistency. If you are having trouble add some warm water to get it going. Serve and top off with pistachios and a good glug of a tasty extra virgin olive oil, the greener the better!
