QUINOA & OAT COCONUT PORRIDGE

Porridge - synonymous with lifeless mush that tastes like wallpaper glue.
Aha not until you have tasted this my friends. Mr R. used to not be such a big fan of porridge, but now really enjoys it with the various toppings I conjure up. This my friends is a warm, filling, hearty, coconutty HUG that will satisfy anyone!

Ingredients

1 cup (240 grams) of quinoa (pre-cooked see basics)

1 cup (240 grams) of oats

2 cups of coconut milk (480 grams)

½ cup of water (120 grams)

Pinch of cinnamon

Pinch of salt

Vanilla (optional)

Stewed blueberries

Fruit to top it off

Method

I like to keep pre-cooked grains in my fridge in a big batch. This is what I like to call a "plant based protein" although lets be honest this protein bussiniss is far to overexagurated in the first place! My staple favourites are rice, buckwheat and quinoa. Mixing grains/pulses/rice/seeds/nuts creates protein, easily absorbable amino acids. More about this in basics.

In a hot pan add pre cooked quinoa, oats and coconut milk, and heat up gently until it all comes together to form porridge like creamy consistency.

Lastly adding the cinnamon and pinch of salt.

In a separate pan, heat up the blueberries with a splash of agave or maple syrup. Mix and stew until warm, syrupy and sweet.

Top off your beautiful porridge with the blueberries and fruits that you love!
