Sweet & sour fried pineapple rice

Everyone loves a good stir fried rice and nine out of ten times its a take away. Well I am here to tell you that it doesn't have to be! This is a showstopper at any dinner party and so simple to make! Also zero waste as the inside of the pineapple is used to give the rice its sweet and sour zing!


2 cups of pre-cooked brown rice

1 pineapple

3 tbs of olive oil

1 cup of onion chopped finely

1 cup of red peppers chopped finely

1 cup of carrots chopped finely

1 cup of green cabbage chopped finely

1 small red chilli finely chopped

3 tbs of roasted cashews

small pinch of salt and pepper


Precook your brown rice as per packet instructions.Start by preparing all your vegetables and cut your pineapple in half. Then gently cut around the edges of the pineapple and take the inside flesh out and cut into cubes and set aside.In a medium sized pan add olive oil and all your beautifully cut veggies (onion, chilli, peppers, carrots and cabbage) and cook for about 5 minutes until lightly browned and soft. Then add the pineapple and give it a good stir.Lastly add your pre-cooked rice, give it a good stir and add some salt and pepper to taste. When the rice has warmed through and is slightly crispy which should take more than 5 minutes it will be time to fill the empty pineapple halves.Fill the pineapple with the fried rice and sprinkle toasted cashews on top and its ready to serve!
