Chocolate Pots with Strawberry Sauce

Chocolate Pots with Strawberry Sauce

Serves 2 - 4 People (depending on size of pots)

Prep time: 30 minutes

Ingredients

Base

4 soft avocados sliced

1/2 cup of maple syrup

6 tbs of raw cacao powder

Sauce

1 punnet of strawberries chopped

Crunch

1/4th (60 grams) cup walnuts

2 tbs coconut sugar

3 tbs of desiccated coconut

Topping

1 punnet of fresh raspberries

Method

This recipe has three components that are prepared separately but finally assembled into beautiful pots of goodness.

Start off by adding all your base ingredients into the 2 litre vitamix container and mix until you have a silky smooth mixture. For best results add your mixture into a piping bag and keep in the fridge until assembly.

Add your chopped strawberries to the 600 ml vitamix container and blend until you have a smooth strawberry sauce and set aside.

For the crunch heat a small pan on medium heat and add the walnuts desiccated coconut and coconut sugar. Let the coconut sugar melt and the coconut and walnuts get slightly toasted. This will take 2-5 minutes. Once done take off the heat and let it cool down fully. Once cooled add to the 225ml vitamix container and pulse until you have bite sized crunchy bits.

Assemble by first piping in the mousse into the bottom of preferably glass pots and alternate with layers of strawberry sauce. Top off with the crunchy mixture and fresh raspberries for tartness.
