Melt in Your Mouth Violife Greek White Feta with Sweet Chutney

I have been a huge fan of Violife for a while. It was one of the first plant-based brands that I started purchasing and actually really enjoyed. My five-year-old daughter loves the cheddar slices and we use the melty mozzarella on pizza frequently.
So when I heard that they had brought out a new vegan feta version I got very very excited! I have some Bulgarian heritage so feta has and always will remind me of my childhood. There are so many ways you can enjoy feta cheese but by far one of my favourite ways is to eat it warm. It melts and instantly gives you a comforting feeling of "having a real treat".
I decided to create a breaded version! Lovely and crisp on the outside and nice and soft on the inside oozing with goodness - served with a sweet chutney and some greens.
Let’s get started with the recipe.
1 packet of Violife Greek White
70 g (21/2 oz / 1/2 cup) chickpea (gram) Flour
125 ml (4 oz / 1/2 cup) water
1/2 teaspoon salt
a small pinch of ground turmeric
a small pinch of chilli flakes
1/2 tablespoon apple cider vinegar
1/2 teaspoon bicarbonate of soda
Fresh rocket & crunchy veggies
Nice Tangy chutney
Start by putting chickpea flour, water, salt, turmeric, bicarbonate of soda and vinegar into a bowl. Give everything a good mix and set aside for 10 minutes.
Heat up a medium sized pan with a good glug of olive oil. Unpack your Violife vegan Feta and gently dip both sides into the mixture. Make sure the cheese has been in the fridge and is nice and cool. This recipe wont work if the vegan feta is room temperature as it will fall apart.
With a spatula gently slide the cheese into the pan and let it fry off for at least a good ten minutes until one side is golden blown. Gently lift ad fry the other side off until that is beautiful and brown too.
You can start preparing you plate with a handful of rocket or any greens and some lovely crisp veggies. Add a dollop of chutney (of your choice) and get ready to serve the vegan feta.
Use one or two spatulas to spoon the vegan feta over onto the plate without the cheese falling apart. Now serve with extra chilli flakes on the top and dig in straight away! You want the cheese to still be warm oozing when you dig in.
