Pumpkin and Sage Spaghetti [Barilla, AD]

To celebrate World Pasta Day @barilla and I partnered together to create this incredibly easy but oh so satisfying pasta dish, inspired by the flavours of Autumn and voted for by you!! So much love has gone into this dish that combines gluten-free spaghetti with pumpkin, sage and the creamiest of sauces. @barilla has the most amazing range of gluten-free products so you can recreate this dish at home!

This is a super simple, super yummy recipe and one I highly recommend you trying out this fall. Paid partnership with Barilla.

Pumpkin and Sage Spaghetti

Pumpkin and Sage Spaghetti: serves 2

Ingredients:

Olive oil

1 onion

1 small pumpkin

1 bunch of sage

salt & pepper to taste

250 ml plant cream or normal cream

20 grams of pine nuts

Barilla spaghetti 150 g per person

Method:
Bring your salted pasta water to the boil and add in your spaghetti. While your pasta is cooking, start on your sauce.

Chop and peel your onion and pumpkin into small pieces and pan-fry on medium heat until browned and cooked through.

In a separate pan, heat olive oil and fry of the sage, remove from the pan and toast your pine nuts and save both for later.

Once your pasta is cooked, drain and add to your pumpkin and onions pan. Stir through to distribute the delicious pieces of pumpkin.

Remove from the heat and add in your cream - stir through to fully coat.

Plate and top with salt, pepper and those toasted pine nuts.

Finish with your crispy sage.
