Light Meals

Light Meals or the infamous salad section. This is often where vegan, vegetarian and plant-based foods earn themselves a bad reputation. Boring lettuce, boiled mushy beans, soggy cold rice and unfulfilling flavours that never seem to complete a meal. But honestly, with the right ingredients salads couldn’t be easier - think filling, easy, tasty, hearty; these salads that will satisfy even the most critical! And I believe in making the best out of what we have. So I try and give you as many varieties as possible and remember to buy seasonally. Tomatoes bought and eaten in winter will not taste the same as in summer. So bear this in mind when choosing what recipes to try!
